It does not have any pictures of the process but the thing I like about it is the simplicity of the filling: shredded chicken, barbeque sauce, and cheese.

However, I live in a part of the world where refrigerated biscuits are hard to find. So, it is nice to find a simple biscuit recipe.
Cream Biscuit Dough Recipe
- 2 cups unbleached flour
- 2 teaspoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon table salt
- 1 ½ cups heavy cream
- Combine the flour, sugar, baking powder and salt in a mixing bowl.
- Stir in cream and mix until the dry ingredients come together
- Turn the dough out onto a lightly floured surface and knead a few times.
- Divide into 8 pieces; press each into a 4-5 inch round.

5. Chicken Pockets with Bread
Instead of making the pastry from scratch or use pre-made pastry, use ready-made pita bread or tortilla wrap as the pocket. No baking is needed.

These can also be prepared in advance for breakfast-on-the-go or a handy snack. Pocket-sized goodness. The ingredients listed serve two.
Ingredients
- 1/2 cup cooked chicken breast
- 2 slices tinned peaches
- 2 tbsp non-fat yoghurt
- 2 tbsp low fat cottage cheese
- 1/2 cup lettuce leaves
- 1/4 cucumber
- 1 small tomato
- 1 whole-wheat pita bread
Instructions
- Shred or chop the cooked chicken breast. Set aside. This is a great dish for leftover roast chicken
- Drain the peach slices and chop into similar sizes as chicken breast. Set aside.
- Chop/Julienne the lettuce leaves into thin shreds. Use a mandolin if you are using a head of lettuce. Set aside
- Chop the cucumber into small cubes. Set aside
- Chop the tomato into small cubes. Set aside
- Slice the pita bread in 2
- In a non-stick frying pan, heat the pita bread
- In a bowl, mix the peaches, cucumber, tomato with the yoghurt and cottage cheese
- Place the shredded lettuce and chicken into each pita pocket and add the peach mixture on top
- Wrap each pocket in plastic wrap and refrigerate until you are ready to eat.
6. Chicken Curry Puff
As a Singaporean, the Southeast asian quintessential chicken pocket is the chicken curry puff. A shortcrust pastry shell contains a mixture of curry with chicken, egg, and cubed potatoes. The shell can be either baked or deep-fried.
There are several variations but here is the classic one.
