Chinese broccoli recipes stashed!
Chinese broccoli is more commonly known as gailan (芥兰). Unlike most green leafy vegetables, the stems are nicer than the leaves. They are typically stir-fried with fresh seafood or pork or beef and served with rice.
Ingredients
200g chinese broccoli
150g pork belly or streaky bacon
3 cloves garlic
1 big onion
6 small red chillies
1 tomato
1 tbsp shaoxing wine
3 tbsp water
Cornstarch solution
Cooking oil
Seasonings
1/2 tbsp oyster sauce
1 tsp light soy sauce
1 tsp fish sauce
1 tsp sugar
- Slice the pork belly into thin slices
- Heat oil in a wok and fry the pork slices until golden and crispy
- Remove onto kitchen towel to absorb excess oil
- Wash the chinese broccoli and remove the leaves from the main stalks
- Cut the leaves into bite-sized pieces
- Peel the tough outer skins of the stalks and slice into bite-sized pieces
- Quarter the tomato
- Slice the garlic, chillies and onion into thin slices
- Combine the ingredients of the seasonings
- Heat up 1 tbsp cooking oil in a wok and gently fry the garlic slices
- Add the onion slices and chillies and fry till fragrant
- Add the chinese broccoli, tomato, water and the seasonings
- Stir fry and toss well
- Add the crispy pork belly
- Drizzle the shaoxing wine and thicken the sauce with the cornstarch solution
- Plate and serve
Chinese broccoli with fresh fish slices
Ingredients
300g Chinese broccoli
200g grey mullet fillet or any white meat fish
1 tsp chopped garlic
1 tbsp shredded ginger
2 tbsp water
2 tbsp cornstarch solution
Cooking oil
Fish marinate
1 tsp oyster sauce
1 tsp light soy sauce
1/2 tsp sesame seed oil
1/2 tsp pepper
1/2 tsp corn flour
Seasonings
1/2 tbsp oyster sauce
1/2 tbsp light soy sauce
1/2 tsp pepper
1/2 tsp sesame seed oil
- Wash the chinese broccoli and remove the leaves from the main stalks
- Cut the leaves in half or thirds depending on its length
- Peel the stalks if the outer skin is tough and cut into similar lengths as the leaves
- Bring a pot of water to a boil with some sugar and cooking oil
- Blanch the chinese broccoli for a minute or 2 before removing and rinsing it under running water
- Wash the grey mullet fillet and slice them
- Marinate them with the fish marinate with corn flour added last
- Combine the seasonings together
- Heat 1 tbsp cooking oil in a wok and gently fry the garlic and ginger
- Add the chinese broccoli, water and seasonings and stir fry quickly
- Add the fish slices and let it cook for a few minutes
- Thicken the dish with the cornstarch solution
- Plate up and serve
Chinese broccoli with mushrooms and ground pork
You can also use fresh shiitake or chinese mushrooms. Wipe them with a clean towel and cut into bite-sized pieces.
Ingredients
250g chinese broccoli
3 dried shiitake mushrooms
100g ground pork
1 tsp chopped garlic
2 tbsp cornstarch solution
Cooking oil
Seasonings
1/2 tbsp oyster sauce
1 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sugar
- Separate the chinese broccoli leaves from the main stalks
- Cut the leaves into bite-sized sections
- Peel the stalks if they are too thick and cut into slices
- Soak the dried shiitake mushrooms in warm water until rehydrated
- Remove and cut into slices, do not throw the soaking water
- Bring a pot of water to a boil and blanch the chinese broccoli
- Remove, drain off excess water and arrange them on a serving plate
- Heat up 2 tbsp cooking oil in a wok and gently fry the garlic until fragrant
- Add the minced pork and stir fry to separate the lumps
- Add the mushrooms and 50ml of the mushroom soaking water
- Combine the seasonings together and add it to the wok
- Toss to mix well and thicken the sauce with the cornstarch solution
- Remove from heat and pour it over the chinese broccoli before serving
