German pancake recipe stashed!

This pancake is baked in the oven. It should puff up high in the oven before it settles down when taken out of the oven. This is normal.


  • 3 large eggs
  • 1/3 cup whole milk
  • 1/3 cup heavy cream
  • 2 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1/2 cup all-purpose flour
  • 1 tablespoon butter
  • Powdered sugar


  • Lemon wedges
  • Butter
  • Maple syrup


  1. Preheat the oven to 475 degree F.
  2. In a mixing bowl, beat the eggs and add the milk, cream, sugar, salt and vanilla
  3. Mix well until the sugar dissolve
  4. Sift the all-purpose flour into the mixture and mix until the mixture is smooth
  5. Let the batter rest for about 10 minutes
  6. Get an oven-safe skillet or a cast-iron skillet and coat the bottom with melted butter
  7. Pour the batter into the pan and place the skillet into the oven and bake it for 14 to 16 minutes
  8. When the top is golden brown or dark brown around the edges
  9. Remove the the pancake from the oven and let it rest for a minute
  10. Loosen the pancake around the edge with a knife or spatula
  11. Slide the pancake out of the pan onto the serving plate
  12. Dust with powdered or icing sugar and serve with some lemon wedges, butter and syrup on the side
